10-Minute detox soup

If you have SIBO or IBS you can omit the garlic.


SERVES 2

INGREDIENTS

1 avocado

1 large handful of green leaves (e.g salad leaves, spinach, kale, rocket)

1 clove garlic

4 cm piece fresh ginger, sliced

½ cucumber, cut into chunks

½ tsp turmeric

¼ tsp chili powder

2 cups hot water

1 tbsp lime juice

2 tbsp parsley

2 tbsp coriander leaves plus some to garnish

2 cups hot water

Himalayan pink salt & freshly ground black pepper to taste

Drizzle of olive oil

2 tbsp natural yoghurt, optional


METHOD

  1. Blend together all ingredients except salt & pepper, oil and yoghurt.

  2. Season to taste

  3. Add to pan and heat gently

  4. When warmed through, dollop in yoghurt and drizzle with olive oil

  5. Sprinkle on coriander leaves to garnish
