
If you have SIBO or IBS you can omit the garlic.
SERVES 2
INGREDIENTS
1 avocado
1 large handful of green leaves (e.g salad leaves, spinach, kale, rocket)
1 clove garlic
4 cm piece fresh ginger, sliced
½ cucumber, cut into chunks
½ tsp turmeric
¼ tsp chili powder
2 cups hot water
1 tbsp lime juice
2 tbsp parsley
2 tbsp coriander leaves plus some to garnish
2 cups hot water
Himalayan pink salt & freshly ground black pepper to taste
Drizzle of olive oil
2 tbsp natural yoghurt, optional
METHOD
Blend together all ingredients except salt & pepper, oil and yoghurt.
Season to taste
Add to pan and heat gently
When warmed through, dollop in yoghurt and drizzle with olive oil
Sprinkle on coriander leaves to garnish
